Fluffy Pancakes

Ingredients:
1 cup all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 large egg
2 tablespoons melted butter (plus extra for cooking)
1 teaspoon vanilla extract
Instructions:
Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Prepare wet ingredients: In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until well combined.
Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; it's okay if the batter is a little lumpy.
Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with a small amount of butter. Once the pan is hot, pour about 1/4 cup of batter onto the skillet for each pancake.
Flip the pancakes: Cook the pancakes for 2-3 minutes or until bubbles form on the surface, and then flip them. Cook for another 1-2 minutes on the other side, until golden brown.
Serve: Serve the pancakes warm with your favorite toppings, such as maple syrup, butter, fresh fruit, or whipped cream.
